Thai Seafood Vermicelli Salad(Yum Woon Sen)
THAI SEAFOOD VERMICELLI SALAD
(Yum Woon Sen)

Ingredients:
- 1 piece of Yanlong vermicelli (around 50g)
- 100g medium size fresh shrimps (peeled and deveined)
- 100g fresh squid (peeled and sliced)
- 100g fresh mussels
- 1 cup Chinese Celery, cut
- 1/2 sliced onion
- 2 cloves minced garlic
- 1 coriander, cut
- 2 red chilli, chopped
- 1 tablespoon Thai fish sauce
- 2 limes, juiced
- 1/2 teaspoon sugar

Instructions:
- Put Yanlong vermicelli in 4 cups of boiling water and keep boiling for 3-4 minutes;
Immediately drain and rinse with cold water;
Drain again and cut vermicelli into 4 inches length.
- Blanch shrimps, squids and mussels in boiling water until done, drain.
- Blanch Chinese celery in boiling water for 1 minute, drain.
- Combine fish sauce, lime juice and sugar together in a small bowl until they are well combined;
Taste for the spicy, sweet and salty flavor, add more chilli, sugar or fish sauce as you like.
- Add all ingredients into a large salad bowl. Mix well.
- Serve immediately
